This simple beet salad recipe is well loved by everyone in the family and friends.
Ingredients for beet salad:
- 3-4 medium-sized beets
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped walnuts
- Fresh parsley or cilantro (optional)
- Salt and pepper to taste
Instructions:
- Preheat your oven to 400°F (200°C). Wash the beets and trim off any greens or roots.
- Wrap each beet individually in aluminum foil, creating a pouch. Place the pouches on a baking sheet and roast them in the preheated oven for about 45-60 minutes, or until the beets are tender when pierced with a fork.
- Remove the beets from the oven and let them cool. Once cool enough to handle, peel off the skin using your fingers or a knife. Cut the beets into bite-sized cubes or slices.
- In a mixing bowl, whisk together the olive oil and balsamic vinegar. Add the beet cubes to the bowl and gently toss them to coat with the dressing.
- Sprinkle the crumbled feta cheese and chopped walnuts over the dressed beets. Add salt and pepper to taste.
