I am so excited to share this “Herring Under a Fur Coat” Salad with you! This is a classic Russian “Shuba” salad and it is five layers of delicious pleasure. The combination of flavours is unusual and will excite your taste.
Shuba means – a layered salad of pickled herring fillets, finely chopped onion, beets, carrots, potatoes and mayo. In Russian, “shuba” means “fur coat”. When you layer your grated cooked beets on top of this salad, it looks similar to the texture of a fur coat, hence the name! I’m always excited when I see this salad show up at family gatherings or holiday parties especially during the winter time.
Ingredients for “Herring Under a Fur Coat” Salad (Shuba):
- 1 1/2 cup pickled herring fish
- 1 small onion finely chopped
- 4 medium potatoes
- 4 medium beets
- 4 medium carrots
- 1 cup mayo
How to make “Herring Under a Fur Coat” salad:
- In Microwave ready dish cook beets for 10 minutes with 2-3 tbls of water.
- In a separate Microwave ready dish cook, cook potatoes and carrots for 10 minutes with 2-3 tbls of water.
- Let the beets, potatoes and carrots cool off.
- Clean beets, potatoes, and carrots.
- Grate each separately on a grater.
- Slice herring and onion into small pieces. Using a combination of a large plate and a mold (or a deep tray).
- Placing the ingredients in the following order:
- First put the slice herring
- Second put the chopped onion
- Third shred the carrots
- Fourth shred the potatoes
- Fifth shred the beets
- Spread the top with 1 cup mayo.

We love it, and your version only differs from mine in that I spread mayo on every layer of veggies. Also, ever since we abandoned potatoes as being too hypoglycemic and too carby at the same time, I started using sweet potatoes.

Very unusual; I will give this a try!
Perhaps, though, I will try it with Salmon. Herring may be a little too strong tasting for us.
