Oven Baked Chicken with Dry Fruits

I have served this chicken on lunch or dinner on family events for years, and it’s a go-to for a quick and easy recipe. The chicken gets caramelized from the glossy and delicious sauce of dry fruits and the result is just wonderful.

It is easy and excellent recipe. The chicken ingredients are simple and just work.

Ingredients for Baked Chicken:

  • 5 chicken legs quarters
  • 1 tsp salt
  • 3 tsp paprika
  • 1 onion
  • 4-5 garlic cloves
  • 1 cup prune
  • 1 cup apricot
  • 1/2 cup raisin

How to make Baked Chicken:

Start with some quick preparation: preheat oven to 430F (220C)

  1. Place the chicken in oven compatible dish
  2. Arrange the chicken Legs quarters in the dish
  3. Add Paprika, and salt
  4. Turn the chicken legs around
  5. Add Paprika, salt onion and garlic on this side
  6. Spread the dry fruits (prunes, apricot, raisins) evenly over the chicken legs
  7. Cover the dish with foil
  8. Back for 45 minutes
  9. That’s it you wonderful lunch is ready, Enjoy……

Zucchini Pancakes

This zucchini pancakes recipe is well loved by everyone in the family, and as a bonus get to eat zucchini without realizing that some healthy vegetables are in the mix.

Zucchini pancakes are quick and easy to make and have the simplest ingredients that everyone have handy at their home.

  • 2 garlic cloves
  • 3 potatoes
  • 2 medium zucchini
  • 2 tbls whole wheat flour

  1. Prepare all of the ingredients, then shred the potatoes and zucchini on a medium size shredder.
  2. Remove the liquid – first by hands and then through a strainer
  3. Add the garlic and mix it
  4. Add the flour, egg and the salt and mix well
  5. Heat the frying pan with some oil on it
  6. Fry for 2 minutes on each side
  7. When golden-brown place them on the paper towel to cool off

This is the perfect recipe for a quick fix when everyone are having this cookie craving that you will need to address. This have all the elements of the perfect cookie with a soft and moist centre, melty chocolate and crisp edges.

Ingredients for Soft Butter Cookies with Chocolate Chips:

  • 1 1/2 cups flour
  • 3/4 cup butter
  • 1/2 cup sugar
  • 1 medium egg
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1/2 cup chocolate chips

How to make the Soft Butter Cookie with Chocolate Chips:

Start with some quick preparation: preheat oven to 350F (175C) and put backing paper on the backing tray

1. In a large mixing bowl with a paddle attachment, cream together butter and sugar on medium/high speed 3-4 minutes.

2. Beat in egg then mix in vanilla extract.

3. In a separate bowl mix the flour and the baking powder

4. Add half of the mix to the bowl with the butter and mix well and then add the other half of the mix to the bowl and mix all together well

5. Add the chocolate chips to the bowl and mix well

6. Use an ice-cream spoon to make balls of dough and space them out on the baking sheets. Bake one cookie tray at a time.

7. Bake the cookies 15 minutes and then place them on a cooling rack to cool down

  • 1 onion
  • 3 cloves garlic
  • 1/2 cup butter
  • 3-4 heads broccoli
  • 4 medium potatoes
  • 5-6 cups water
  • 5 bay leaves
  • 3 tsp salt

How to make the Broccoli Puréed Soup:

1. Prepare the ingredients: onion, garlic, butter, potatoes and broccoli.

2. Heat the pot and melt the butter

3. Cut the onion and the garlic

4. Add to the pot and mix well

5. Add 5-6 cups of hot water to the pot (based on your pot size)

6. Cut potatoes and add them in

7. Add bay leaves and salt and cook 15 minutes

8. Add the broccoli and cook another 20 minutes

9. When it’s ready move it to blender and blend for 1-2 minutes until smooth

Crab Salad

This crab salad is my trademark dish! I usually make this for family events, family dinner and parties. I really love it because it is so easy and quick to make.

Ingredients for crab salad:

  • 1/4 head cabbage
  • 1 large cucumber
  • 1 package crabmeat (or imitation crab)
  • 1/2 cup shredded cheddar cheese
  • 2 tbls mayo

How to make crab meat salad:

  1. Prepare all of the ingredients, then first grind the crabmeat then the cabbage and the last one is the cucumber.
  2. Then mix the ingredients from the bottom up
  3. Add 1/2 cup shredded cheddar cheese and mix again
  4. Add 2 tbls of mayo and mix well
  5. And that’s it! This salad is quick and easy to make. I hope your family will love it!

Chicken Patties

These chicken patties are so juicy and delicious. They’re healthier than the average chicken patty since they are loaded with zucchini.

These patties are perfect with pasta, mashed potatoes, salad and grilled vegetables. You can also serve them as mini chicken burgers – with salad on the side.

The secret to juicer patties is a combination of Zucchini as a binding ingredient and the cooking method. I tried them covered and uncovered and the covered ones turned out much juicier and the flavours melded together just right.

Ingredients for chicken and zucchini patties:

  • 1 medium egg
  • 1 medium onion
  • 2 lb grounded chicken breast
  • 1 medium zucchini
  • 3 garlic cloves
  • 1 tsp salt
  • 1 tsp paprika

How to make juice chicken and zucchini patties:

  1. In a large bowl, combine: 2 lb ground chicken, grated zucchini, grated onion, 3 grated garlic clove, 1 egg, 1 tsp salt and 1 tsp paprika.
  2. Heat 2 Tbsp of oil in a nonstick pan. Once oil is hot, add the patties. Cover and cook until golden on both sides. Cook about 2 minutes on the first side and 2-3 minutes on the next. Wipe your pan with a paper towel between batches and add more oil as needed. Remove to a plate and serve warm.

Breakfast at my House

During the week we’re often walking out the door with a coffee in one hand and slice of toast in the other, but on weekends breakfast is never rushed. It’s a late affair, sometimes spilling over to lunch, with lots of reading and chatter in between courses of fruits, poached eggs, honey and toast. One of our favorite things we like to serve when friends are visiting are buckwheat blueberry pancakes.
