Here’s a delicious gluten-free chocolate chip cookie recipe, you have to try it, kids love it!!!
Ingredients:
- 2 cups gluten-free all-purpose flour (with xanthan gum)
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, melted
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 tablespoon vanilla extract
- 1 large egg
- 1 large egg yolk
- 2 cups semisweet chocolate chips
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Mix Dry Ingredients: In a medium bowl, whisk together the gluten-free flour, baking soda, and salt. Set aside.
- Combine Wet Ingredients: In a large bowl, cream together the melted butter, brown sugar, and granulated sugar until well blended. Beat in the vanilla extract, egg, and egg yolk until light and creamy.
- Mix Together: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Stir in the chocolate chips by hand using a wooden spoon.
- Scoop Dough: Drop cookie dough by rounded tablespoonfuls onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly browned. The centers may still look a bit underdone, but they will set as they cool.
- Cool: Allow the cookies to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
