This zucchini pancakes recipe is well loved by everyone in the family, and as a bonus get to eat zucchini without realizing that some healthy vegetables are in the mix.
Zucchini pancakes are quick and easy to make and have the simplest ingredients that everyone have handy at their home.
Ingredients for Zucchini Pancakes:
- 2 garlic cloves
- 3 potatoes
- 2 medium zucchini
- 2 tbls whole wheat flour
- 1 medium egg
- 1 tsp salt
How to make zucchini pancakes:
- Prepare all of the ingredients, then shred the potatoes and zucchini on a medium size shredder.
- Remove the liquid – first by hands and then through a strainer
- Add the garlic and mix it
- Add the flour, egg and the salt and mix well
- Heat the frying pan with some oil on it
- Fry for 2 minutes on each side
- When golden-brown place them on the paper towel to cool off
